The color is golden yellow, bright and brilliant .
The perfume is rich , mellow with notes of dried apricot , honey, dates and candied fruit , surrounded by the mellow scent of a rose.
On the palate , the impact is enveloping and the taste immediately recalls hints of apricot and candied fruit perceived by smelling it. The finish is well balanced by acidity, giving freshness and length.
Semillon, Traminer and Sauvignon from ourvineyards in Seggiano, harvested at the end of August.
Soft pressing, cold ageing, slow fermentation in tonneau for 12 months, further ageing in bottles for 12 months.
15% alcohol level.
Service temperature of 13–14° C.
It keeps very well for at least 5-6 years
It pairs well with foie gras, mature cheeses, dry pastries, dried fruit and nuts.
The youngest research project in the vineyard and in the cellar of the Panizzi house, the Passito, was born on the slopes of Monte Amiata: it is a blend - unusual for Tuscany - of traminer, sauvignon blanc and semillon, vinified using the appassimento method. A unique and modern interpretation of a sweet wine style, with Panizzi signature.
