Clean the artichokes, then cut them into slices and soak them in water and lemon juice.
Prepare the batter by beating the eggs, adding a spoonful of Parmesan and a spoonful of pecorino cheese in a bowl, salt and pepper. Drain the artichokes, dry them and pass them first in the flour then in the batter. Heat abundant oil in a pan and fry the artichokes a few at a time, then place them on absorbent paper, dry them quickly and serve hot.
