Passito di Toscana IGT

Panizzi's youngest research project in the vineyard and cellar, Passito, was born on the slopes of Monte Amiata: it is a blend-unusual for Tuscany-of traminer, sauvignon blanc and semillon, vinified using the appassimento method. A unique and modern interpretation of the dessert wine style of Tuscan origin, all in a Panizzi key.

VINTIGO

Semillon, Traminer and Sauvignon from our vineyards in Seggiano, harvested in late August.

Vinification/refining

Soft pressing, cold decanting, fermentation in slow-paced tonneau for 12 months, bottle aging for 12 months.

Sensory notes

The color is golden yellow, bright and brilliant. The aroma is ample, persuasive with notes of dried apricot, honey, dates and candied fruit, enveloped by a persuasive scent of rose. On the palate, the impact is enveloping and immediately recalls the hints of apricot and candied fruit perceived on the nose. The finish is well balanced by an acidity that gives freshness and length.

Pair with foie gras, aged cheeses, dry pastries, dried fruits.

Conservation

It keeps excellently for 5-6 years.
