Experimental Soul

Single vineyard

Evoè is our experimental soul, which actually rests on an ancestral winemaking concept. The result of a long maceration on the skins, however, it is not a vernaccia orange version, but rather a wine that expresses ancient production philosophies applied to the idea of a contemporary, gritty and gastronomic wine. Evoè is the cry of joy of the Bacchantae in honor of Dionysus.

Vinification/aging

6 months of maceration on the skins in a conic-shaped oak barrel of 20 hl. Aged in French oak tonneaux for 10 months with its own natural yeasts. Unfiltered. Bottle-aged for 24 months before release.

Sensory notes

golden and intense on the nose, it is enriched with unusual nuances thanks to maceration, such as elderflower, passion fruit, candied ginger and incense, without, however, penalizing the citrus and herbal notes characteristic of the varietal. A spicy touch lengthens its flavor persistence, with balsamic and mineral returns. However, the great structure and aromatic complexity are well balanced by a streamlined, easy-going sip

Origin

is the fruit of the pressing of very ripe grapes from various estate vineyards, usually harvested at the end of September, a kind of late harvest aimed at aromatic and sugar concentration. Selected bunches, perfectly healthy, suitable for long maceration and aging on fine lees.
