Clone 777: the challenge within the challenge

Ermius, August in Etruscan is a challenge within the challenge of pinot noir in San Gimignano. It is the selection, again within the La Ventola vineyard, of the best grapes from a single clone: the 777 selected in Burgundy. A wine at once bewitching and complex both in its aromas and on the palate, it is characterized by articulation, balance, freshness and roundness. Ermius is the result of a collaboration with Tuscan winemaker Alessandro Cellai, Panizzi's consultant since 2018, who joins the winery team led by Walter Sovran, technical director. Ermius complements the San Gimignano Pinot Noir Doc, demonstrating all of Panizzi's passion and study for this varietal, planted in 2006 on the intuition of Simone Niccolai, owner of the winery who succeeded Giovanni Panizzi.

Vinification/aging

Cold pre-fermentative maceration and fermentation in contact with the skins and long post-fermentative maceration in a truncated wooden vat. Maturation in barriques for 12 months, followed by bottle aging for at least 24 months.

Sensory notes

brilliant ruby red. Intense nose of red fruit, giving the characteristic wild strawberry, hints of tangerine peel and subtle spicy notes. In the mouth it is broad and intense, revealing an immediate sensation of volume. Savory, with a nice freshness that underscores the fruity notes. Soft, well-integrated tannins sculpt its balanced sip with great fruity persistence
