Celii, September in Etruscan, is Panizzi's new project dedicated to merlot, Bordeaux clone 181, an ongoing experimentation to which we are particularly attached. Continuous research is what drives us from the very beginning, and this new challenge aimed at investigating merlot's ability to interpret the territory of San Gimignano is something we are passionate about. Since the first vintage of production, 2020, clone 181 has revealed an extraordinary ability to adapt, reading the tufaceous soil typical of the area in an original way.

Vinification/refining

Harvest in October. 48 hours of pre-fermentation maceration at low temperature followed by 12 hours of maceration on skins in temperature-controlled stainless steel. Malolactic fermentation in third-passage barriques, followed by 12 months of maturation in small wood. Bottle aging of at least 18 months

Sensory notes

bewitching and complex, the nose reveals the characteristic fruity sensations typical of the grape variety, black cherry and small black fruits, which we also find as aromas in the mouth finish. The palate is characterized by acid backbone, savoriness and precision and excellent persistence

Selection of the best merlot grapes Bordeaux clone 181, from the Capanneto vineyard; 410 meters altitude, northwest exposure. 0.7 ha vineyard, planted in 2005.
