Panizzi's extra virgin olive oil comes from olives of the Leccino, Frantoio and Moraiolo varieties, harvested by hand picking from late October through the end of November. The olives are pressed within 24 hours of harvesting to avoid triggering oxidative phenomena in the olives and preserve the freshness of the fruit. The olives are cold pressed so as to obtain a superior category oil that maintains its nutritional and physical qualities unaltered.
Our olive groves extend over the hills of San Gimignano, at an altitude ranging from 250 to 350 meters above sea level, on clay-limestone soils, and surround the Panizzi vineyards, creating a promiscuous growing environment that is ideal for the production of high quality extra virgin olive oil.The classic structure of the Tuscan olive grove with the Frantoio, Moraiolo and Leccino varieties gives a particularly balanced and complex oil in aromas. The Frantoio cultivar gives a fruity flavor and a very pleasant spicy thrust due to its high amount of polyphenols; the Moraiolo cultivar, another highly polyphenolic variety gives additional spicy notes; and the Leccino, a sweeter cultivar, smooths the edges and gives a polished taste.
Color: Bright green like spring shoots, the color intensity will become milder in a few months.
Taste: Soft, fruity outlined by the spicy character typical of Tuscan oil, with peppery taste that tickles the throat.
Pairings: Ideal on appetizers of lentils and other legumes, raw meat carpaccio with ovoli mushrooms, tuna marinades, asparagus soups, pasta dishes with vegetables, blue fish au gratin, grilled red meats, and is best tried on aged string cheese and on salads.
Suggested Usage: Suitable for seasoning raw cold and hot dishes of medium texture. Also suitable for short cooking at high temperatures, as its high polyphenol content makes it stable even at high temperatures.
